Virtual machines..
So whats the word on the street with multiple processors in virtual machines.. Is it still best practice to give them one Vcore or should we be using more than one now?

Depends on your budget I would say in the first place.

Do you mean multiple cores (simulated) in that virtualised (guest) machine or host machine? I have quad core as a host and set number of cores for my Virtualbox machines to 1 most of the time, however the last one is set to 4 as I want to experience whether it'll make any difference.
Hard to say though whether there is a difference unless one runs few stress tests using different OS and number of cores inside a guest.
A hosting company I use for one of client's VPS's uses 8 core server to host multiple VPS's. They use 8 cores inside each virtual machine (Xen) and the performance is stellar.
